Puducherry: Pondicherry University on Thursday inaugurated the DST-FIST Level B-sponsored Extrusion Hub at its Department of Food Science and Technology, aimed at fostering innovation and entrepreneurship in food processing.

Vice-Chancellor Prof. P. Prakash Babu inaugurated the facility, highlighting its role in supporting women entrepreneurs, farmers, and start-ups. He emphasized its potential to create livelihood opportunities for unemployed youth and drive sustainable development.

Registrar (i/c) Dr. Rajneesh Bhutani underscored the Extrusion Hub's societal impact, while K. Tharanikkarasu, Director (SEI&RR), discussed its academic significance in skill development and research. Dr. Joseph Selvin, Dean of the School of Life Sciences, stressed the hub's contribution to fostering entrepreneurship and self-reliance.

Extrusion technology is widely used in producing snacks, cereals, plant-based meat, and processed foods, offering new possibilities for sustainable and nutritious products. The facility aims to empower small-scale food entrepreneurs and farmers, enhancing productivity and economic growth.

Nearly 50 farmers participated in a training program, and students showcased innovative food products at the event. The initiative reflects Pondicherry University's commitment to advancing food technology and research.
